Throughout the school year, I’m always scouring Pinterest for recipes I’d like to try but I don’t have a lot of time to try new things and don’t have a lot of money to buy expensive ingredients. So, I saved a bunch of them under “summer cooking list” because I figured it’d also be fun to cook it with my sisters.
Today, we made the first thing from that list. It’s a spinach ricotta fettucine pasta with mushrooms and prawns. Suffice to say I love cheese, but ricotta is a whole other level for me. I double love it. I also realized that this pasta has all my favourite pizza toppings on it. Recall that when Hui Jie and I order pizza at Penn we always get spinach, ricotta and mushrooms. This makes me so happy.
